Cool Chocolaty & Minty Fairy Cakes
A perfect Little Cake to cool & soothe sun-drenched kids. Great to revive & refresh sun snoozing grown-ups too!
A light & chocolaty cake base
A minty ice cream topping
A light cocoa dusting
A sprinkle of chocolate curls
Crowned with a fresh sprig of garden mint
Dry Ingredients
Put all the dry ingredients in a big mixing bowl
120 g sugar
140 g plain flour
30 g cocoa powder
3/4 teaspoon of baking soda
1/2 teaspoon of baking powder
1/2 teaspoon of salt
Sieve anything lumpy
Mix together with a hand whisk
Wet Ingredients
Put all the wet ingredients into a shake it bottle
200 ml plant milk
3 teaspoons cider vinegar
100 ml sunflower oil
2 teaspoons natural vanilla essence
Shake it in a bottle until super frothy. Great fun for the little ones!
Mix & Bake
Gently with a hand whisk mix the wet & dry ingredients together
Spoon the mixture into paper cases
Place into a preheated (350 F or 180 C) oven for 20 minutes
Take out & cool
Topping & Decorating
Chocolaty & Minty Ice Cream Topping
All Ingredients
Put all the ingredients in a Shake it jar or blender
400 ml coconut cream
90 g icing sugar
A drop or two of natural peppermint essence
Shake it till super frothy & freeze. Great fun for the little ones!
Spoon a generous dollop on top of each Little Cake
Add a gentle dusting of cocoa powder
A scattering of chocolate curls
And finally a crown of garden mint
