A summer fresh dippy-spread

Delish dolloped on a baked spud

Ingredients
400g Steamed & dried firm tofu (drain off excess water)
2 finely sliced onions
1 diced cucumber
2 chopped apples
2-4 teaspoons of fresh lemon juice (add more if you like an extra zing)
1 generous handful of toasted sunflower seeds (keep some to garnish)
1-2 crushed cloves of garlic
1 tablespoon of light cooking oil
A sprinkle or 2 of dark sugar
1 teaspoon of sweet chilli sauce (more if you like it hot & spicy)
A spring or 2 of chopped garden mint
A pinch or 2 of salt & freshly crushed black pepper
Method
Slowly & gently warm the oil in a skillet (frying pan)
Add the onions
Cook on a low to medium heat
Stir occasionally
After 10 mins add a sprinkle or 2 of dark sugar (optional)
Continue until the onions are a beautiful golden caramel colour
Blitz everything together until smooth
Chill
Garnish with
Sunflower seeds
Chopped red chili
Ground black pepper
