  • Perfect for school pack lunches

  • Ideal for picnic & party sandwiches

  • Delish dolloped on a baked spud

  • Irresistible for dipping

 

Simple & delish plant based nosh for kids & grown-ups

 

Ingredients

  • 400g Steamed & dried firm tofu (drain off excess water)

  • 2 finely sliced onions

  • 1 diced cucumber

  • 2 chopped apples

  • 2-4 teaspoons of fresh lemon juice (add more if you like an extra zing)

  • 1 generous handful of toasted sunflower seeds (keep some to garnish)

  • 1-2 crushed cloves of garlic

  • 1 tablespoon of light cooking oil

  • A sprinkle or 2 of dark sugar

  • 1 teaspoon of sweet chilli sauce (more if you like it hot & spicy)

  • A spring or 2 of chopped garden mint

  • A pinch or 2 of salt & freshly crushed black pepper

Method

  1. Slowly & gently warm the oil in a skillet (frying pan)

  2. Add the onions

  3. Cook on a low to medium heat

  4. Stir occasionally

  5. After 10 mins add a sprinkle or 2 of dark sugar (optional)

  6. Continue until the onions are a beautiful golden caramel colour

  7. Blitz everything together until smooth

  8. Chill

  9. Garnish with

  • Sunflower seeds

  • Chopped red chili

  • Ground black pepper
