Kalonji Seeds
The tiny little black kalonji seeds are also known as Nigella seeds. Kalonji seeds add a wonderful oniony & herby zing to our sausages. Traditionally the seeds are used in some naan bread recipes & many vegetable dishes.
Ingredients
DRY:
2 cups of vital wheat gluten
2 cups of nutritional yeast
1-2 teaspoons sea salt
1-2 teaspoons freshly ground black pepper
2 teaspoons kalonji seeds
2 teaspoons garlic powder
4-5 teaspoons dried thyme
WET:
4 tablespoons tomato puree
7 tablespoons balsamic vinegar
6 tablespoons sweet soy sauce
2 tablespoons mild sweet chilli sauce
water
Method
Put all the dry ingredients into a bowl
Mix well
Put all the wet ingredients into a measuring jug
Top up the jug with water to make 1 3/4 cups
Mix well
Slowly add the 1 3/4 liquid to the dry ingredients
Mix well
Knead a little
Roll into a sausage shape
Roll up in parchment paper
Cooking
Steam for 15-20 minutes
Keep wrapped
Move to a preheated oven 180 C
Bake for 15 mins
Cool & unwrap
Ready to eat
For extra yumminess sizzle your sausages in a little oil for about 20 secs each side
